Instructions
Step 1: Prepare the Ingredients

Step 2: Cook the Potatoes
In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the baby potatoes in a single layer, cut side down. Sprinkle with salt, pepper, and half of the dried herbs. Step 3: Sear the Beef
In the same skillet, add the remaining olive oil and 1 tablespoon of butter. When the butter begins to foam, add the beef chunks in batches to avoid crowding. Season with salt, pepper, and the remaining herbs. Sear each side for about 1–2 minutes until browned but still tender inside. Remove the beef and set aside.
Step 4: Make the Garlic Herb Sauce
Reduce the heat to medium. Add the remaining tablespoon of butter and the minced garlic to the skillet. Cook for about 30 seconds until fragrant, stirring constantly to avoid burning. If using, deglaze the pan with lemon juice or white wine, scraping up any brown bits for added flavor.
Step 5: Combine and Finish Cooking
Return the cooked potatoes and beef to the skillet. Toss gently to coat in the garlic butter sauce. Cook together for an additional 2–3 minutes until everything is heated through and well coated. Taste and adjust seasoning as needed.
Step 6: Serve
