Classic Fluffy Pancakes with Berries and Maple Syrup

A comforting breakfast favorite made from scratch

Introduction

There are few things more satisfying than a plate of warm, fluffy pancakes first thing in the morning. Whether you’re preparing a cozy family breakfast, a weekend brunch, or simply craving something indulgent and homemade, these pancakes are the perfect solution. With their golden-brown exterior, pillowy soft interior, and comforting aroma, they appeal to both adults and children alike. When topped with vibrant fresh berries and a generous drizzle of maple syrup, they transform from a simple morning meal into an elegant and delicious experience. This recipe uses common ingredients and a straightforward method to help you achieve perfect results every time, even if you’re new to pancake-making.

Ingredients

For the Pancakes:

  • 1½ cups (190 grams) all-purpose flour

  • 2 tablespoons granulated sugar

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • 1¼ cups (300 milliliters) milk (whole or semi-skimmed preferred)

  • 1 large egg

  • 3 tablespoons unsalted butter, melted and slightly cooled

  • 1 teaspoon vanilla extract (optional, for extra flavor)

For Serving:

  • A handful of fresh blueberries

  • A handful of fresh raspberries or sliced strawberries

  • Pure maple syrup or high-quality honey

  • Additional butter for topping (optional)

  • Powdered sugar for dusting (optional)

Method

Step 1: Prepare the Batter

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined. In a separate bowl, beat the egg and then mix in the milk, melted butter, and vanilla extract if using. Make a well in the center of the dry ingredients and slowly pour in the wet mixture. Using a wooden spoon or silicone spatula, stir gently until the batter is just combined. It’s okay if a few small lumps remain—overmixing can lead to dense pancakes. Set the batter aside to rest for 5 to 10 minutes. This resting time allows the gluten to relax and the baking powder to activate, resulting in fluffier pancakes.

Step 2: Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Once hot, lightly grease the surface with a small amount of butter or neutral oil. Pour about ¼ cup (60 ml) of batter onto the pan for each pancake. Cook until you see small bubbles forming on the surface and the edges start to set—this usually takes around 2 to 3 minutes. Carefully flip the pancake and cook the other side until it turns golden brown and is cooked through, about 1 to 2 additional minutes. Remove from the pan and place on a warm plate. Repeat with the remaining batter, greasing the pan as needed.

Step 3: Garnish and Serve

Stack the pancakes on individual serving plates or one large platter. Top with a generous handful of fresh berries and drizzle with maple syrup. For added richness, place a small pat of butter on top. You may also dust the pancakes lightly with powdered sugar if desired. Serve immediately while warm, accompanied by coffee, tea, or freshly squeezed juice.

Make-Ahead and Storage Tips

These pancakes can be made in advance and stored in an airtight container in the refrigerator for up to 3 days. For longer storage, allow the pancakes to cool completely, then freeze them with parchment paper between each pancake to prevent sticking. To reheat, use a toaster, microwave, or a hot pan until warmed through. Avoid over-reheating to preserve the texture.
