Ingredients
For the Vegetable Patties:
- 3 medium potatoes, peeled and boiled
- 1 small zucchini, grated
- 1 carrot, grated
- 3 eggs
- ½ cup semolina or breadcrumbs
- ¼ cup fresh parsley, chopped
- 2 tablespoons butter, melted
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika (optional, for extra flavor)
For Cooking:
- 2 tablespoons olive oil or butter (for frying)
Step-by-Step Instructions
Step 1: Prepare the Vegetables
- Boil the potatoes until soft (about 15–20 minutes), then drain and mash them in a large bowl.
- Grate the zucchini and carrot, then squeeze out excess moisture using a clean kitchen towel.
- Finely chop the fresh parsley.
Step 2: Make the Patty Mixture
- To the mashed potatoes, add the grated zucchini, grated carrot, chopped parsley, melted butter, salt, black pepper, garlic powder, and paprika.
- Mix well, then stir in the eggs and semolina (or breadcrumbs) to form a thick dough-like mixture.
- If the mixture is too soft, add a little more semolina or breadcrumbs until it holds its shape.
Step 3: Shape & Cook the Patties
- Take a handful of the mixture and shape it into small round patties.
- Heat olive oil or butter in a non-stick pan over medium heat.
- Place the patties in the pan and cook for 3–4 minutes per side, until crispy and golden brown.
- Remove from the pan and place on a plate lined with paper towels to absorb excess oil.
Step 4: Serve & Enjoy
Serve warm with yogurt dip, sour cream, or a spicy mayo sauce for extra flavor.
