Ingredients

For the Vegetable Patties:

  • 3 medium potatoes, peeled and boiled
  • 1 small zucchini, grated
  • 1 carrot, grated
  • 3 eggs
  • ½ cup semolina or breadcrumbs
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons butter, melted
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (optional, for extra flavor)

  • 2 tablespoons olive oil or butter (for frying)

Step-by-Step Instructions

Step 1: Prepare the Vegetables

  1. Boil the potatoes until soft (about 15–20 minutes), then drain and mash them in a large bowl.
  2. Grate the zucchini and carrot, then squeeze out excess moisture using a clean kitchen towel.
  3. Finely chop the fresh parsley.

Step 2: Make the Patty Mixture

  1. To the mashed potatoes, add the grated zucchini, grated carrot, chopped parsley, melted butter, salt, black pepper, garlic powder, and paprika.
  2. Mix well, then stir in the eggs and semolina (or breadcrumbs) to form a thick dough-like mixture.
  3. If the mixture is too soft, add a little more semolina or breadcrumbs until it holds its shape.

Step 3: Shape & Cook the Patties

  1. Take a handful of the mixture and shape it into small round patties.
  2. Heat olive oil or butter in a non-stick pan over medium heat.
  3. Place the patties in the pan and cook for 3–4 minutes per side, until crispy and golden brown.
  4. Remove from the pan and place on a plate lined with paper towels to absorb excess oil.
