  • 1 large potato, grated

  • 2 eggs
  • ½ cup green onions or parsley, chopped
  • 3 tablespoons all-purpose flour (or cornstarch for a crispier texture)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder (optional, for extra flavor)
  • ½ teaspoon paprika (optional, for a slight smokiness)
  • ½ teaspoon baking powder (optional, makes them fluffier)

For Frying:

  • ½ cup vegetable oil (for shallow frying, adjust as needed)

Step-by-Step Instructions

Step 1: Prepare the Vegetables

  1. Grate the zucchini, carrot, and potato using a coarse grater.
  2. Place the grated zucchini and potato in a clean kitchen towel and squeeze out as much excess water as possible. This helps the patties stay crispy.
  3. Transfer the grated vegetables to a large mixing bowl.

Step 2: Make the Patties Mixture

  1. Add the grated cheese, eggs, chopped green onions or parsley, flour, salt, black pepper, garlic powder, paprika, and baking powder to the bowl.
  2. Mix everything well until a thick, moldable mixture forms. If the mixture is too wet, add a little more flour.

Step 3: Shape the Patties

  1. Take a small handful of the mixture and shape it into round patties, about ½ inch thick.
  2. Repeat until all the mixture is used.

Step 4: Fry Until Golden Brown

  1. Heat vegetable oil in a frying pan over medium heat.
