Ingredients
(Makes 10-12 patties)
For the Patties:
- 1 medium zucchini, grated
- 1 large carrot, grated
- 1 large potato, grated
- ½ cup cheese, grated (cheddar or mozzarella for extra flavor)
- 2 eggs
- ½ cup green onions or parsley, chopped
- 3 tablespoons all-purpose flour (or cornstarch for a crispier texture)
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder (optional, for extra flavor)
- ½ teaspoon paprika (optional, for a slight smokiness)
- ½ teaspoon baking powder (optional, makes them fluffier)
For Frying:
- ½ cup vegetable oil (for shallow frying, adjust as needed)
Step-by-Step Instructions
Step 1: Prepare the Vegetables
- Grate the zucchini, carrot, and potato using a coarse grater.
- Place the grated zucchini and potato in a clean kitchen towel and squeeze out as much excess water as possible. This helps the patties stay crispy.
- Transfer the grated vegetables to a large mixing bowl.
Step 2: Make the Patties Mixture
- Add the grated cheese, eggs, chopped green onions or parsley, flour, salt, black pepper, garlic powder, paprika, and baking powder to the bowl.
- Mix everything well until a thick, moldable mixture forms. If the mixture is too wet, add a little more flour.
Step 3: Shape the Patties
- Take a small handful of the mixture and shape it into round patties, about ½ inch thick.
- Repeat until all the mixture is used.
Step 4: Fry Until Golden Brown
- Heat vegetable oil in a frying pan over medium heat.
- Once the oil is hot, place the patties in the pan, making sure not to overcrowd.
- Fry for 3-4 minutes per side, or until golden brown and crispy.
- Transfer to a plate lined with paper towels to absorb excess oil.
Step 5: Serve and Enjoy!
- Serve these crispy vegetable patties warm, with your favorite dipping sauce.
- Best pairings:
Garlic yogurt sauce (Greek yogurt + minced garlic + salt)
Spicy ketchup or sriracha mayo
Tzatziki sauce
Classic sour cream or cheese dip
