Ingredients
(Makes about 10-12 fritters)
For the Vegetable Mixture:
- 2 medium zucchinis, grated
- 2 medium potatoes, peeled and grated
- 2 medium carrots, peeled and grated
- 1 medium onion, finely grated or chopped
- 2 eggs
- ½ cup fresh parsley or green onions, finely chopped
- 3 tablespoons all-purpose flour (or substitute with cornstarch for a crispier texture)
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- ½ teaspoon paprika (optional, for extra flavor)
- ½ teaspoon garlic powder (optional, for a savory touch)
- ½ teaspoon baking powder (for a light, airy texture, optional)
For Frying:
- ½ cup vegetable oil (for shallow frying, adjust as needed)
Step-by-Step Instructions
Step 1: Prepare the Vegetables
- Grate the zucchini, potatoes, and carrots using a coarse grater.
- Place the grated zucchini and potatoes in a clean kitchen towel or cheesecloth, squeeze out as much excess water as possible. This is key to achieving crispy fritters!
- Transfer the drained vegetables to a large mixing bowl.
- Add the grated onion, chopped parsley (or green onions), eggs, flour, salt, pepper, paprika, garlic powder, and baking powder.
- Mix everything well until a thick, moldable mixture forms. If the mixture is too wet, add a little more flour.
Step 2: Shape the Croquettes
- Take a small handful of the vegetable mixture and shape it into oval or cylindrical croquettes (like in the picture).
- Repeat until all the mixture is used.
Step 3: Fry Until Golden Brown
- Heat vegetable oil in a pan over medium heat.
- Once the oil is hot, carefully add the fritters in batches. Don’t overcrowd the pan!
- Fry for 3-4 minutes per side, or until golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil.
Step 4: Serve and Enjoy!
- Serve these crispy vegetable fritters warm with your favorite dipping sauce.
- Best pairings:
Garlic yogurt sauce (Greek yogurt + minced garlic + salt)
Spicy ketchup or chili mayo
Tzatziki sauce
Cheese or sour cream dip
