Ingredients

For the Vegetable Mixture:

  • 2 medium zucchinis, grated
  • 2 medium potatoes, peeled and grated
  • 2 medium carrots, peeled and grated
  • 1 medium onion, finely grated or chopped
  • 2 eggs
  • ½ cup fresh parsley or green onions, finely chopped
  • 3 tablespoons all-purpose flour (or substitute with cornstarch for a crispier texture)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional, for extra flavor)
  • ½ teaspoon garlic powder (optional, for a savory touch)
  • ½ teaspoon baking powder (for a light, airy texture, optional)

For Frying:

  • ½ cup vegetable oil (for shallow frying, adjust as needed)

Step-by-Step Instructions

Step 1: Prepare the Vegetables

  1. Grate the zucchini, potatoes, and carrots using a coarse grater.
  2. Place the grated zucchini and potatoes in a clean kitchen towel or cheesecloth, squeeze out as much excess water as possible. This is key to achieving crispy fritters!
  3. Transfer the drained vegetables to a large mixing bowl.
  4. Add the grated onion, chopped parsley (or green onions), eggs, flour, salt, pepper, paprika, garlic powder, and baking powder.
  5. Mix everything well until a thick, moldable mixture forms. If the mixture is too wet, add a little more flour.

Step 2: Shape the Croquettes

  1. Take a small handful of the vegetable mixture and shape it into oval or cylindrical croquettes (like in the picture).
  2. Repeat until all the mixture is used.

Step 3: Fry Until Golden Brown

  1. Heat vegetable oil in a pan over medium heat.
  2. Once the oil is hot, carefully add the fritters in batches. Don’t overcrowd the pan!
  3. Fry for 3-4 minutes per side, or until golden brown and crispy.
  4. Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil.
