Ingredients

For the Caramel Layer:

  • 1 cup sugar
  • 2 tablespoons water

For the Custard Layer:

  • 4 cups milk (whole milk preferred)
  • 1 cup condensed milk
  • 5 large eggs
  • 1 teaspoon vanilla extract

For the Cake Layer:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup melted butter
  • 1/4 cup milk

Preparation Method

Step 1: Prepare the Caramel

  1. Heat sugar and water in a small saucepan over medium heat. Stir continuously until the sugar melts and turns into a golden amber caramel.
  2. Immediately pour the caramel into the bottom of a heatproof baking dish. Swirl the dish to spread the caramel evenly before it hardens.

Step 2: Prepare the Custard

  1. In a mixing bowl, whisk together eggs and vanilla extract until smooth.
  2. Gradually add the milk and condensed milk, stirring gently until fully combined.
  3. Pour the custard mixture over the caramel layer in the baking dish.

Step 3: Make the Cake Batter

  1. In another bowl, combine all-purpose flour, baking powder, and sugar.
  2. Add the eggs, melted butter, and milk, mixing until the batter is smooth and lump-free.
  3. Carefully pour the cake batter over the custard layer. The batter will float on top of the custard.

Step 4: Bake the Cake

  1. Place the baking dish into a larger tray or roasting pan. Fill the tray with hot water, creating a water bath (bain-marie). This prevents the custard from cracking while baking.
  2. Preheat your oven to 350°F (175°C) and bake the dessert for about 50–60 minutes, or until the cake layer is firm and golden brown.

Step 5: Cool and Serve

  1. Remove the baking dish from the water bath and allow it to cool to room temperature.
  2. Refrigerate the dessert for at least 3 hours to set the layers properly.
  3. Once chilled, run a knife along the edges of the dish and carefully invert it onto a serving plate. The caramel will flow over the top, creating a glossy finish.
