Ingredients

For the Cake:
  • 1 ¾ cups (220 g) all-purpose flour
  • ¾ cup (65 g) unsweetened cocoa powder
  • 2 cups (400 g) granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240 ml) whole milk
  • ½ cup (120 ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240 ml) boiling water
For the Ganache:
  • 8 ounces (225 g) semi-sweet chocolate, finely chopped
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons unsalted butter (optional, for extra shine)
For Garnish:
  • Fresh strawberries (as many as desired)
  • Chocolate drizzle (optional)

Instructions

Step 1: Prepare the Cake
  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Gradually add the boiling water, stirring until the batter is smooth and slightly thin.
  5. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Step 2: Make the Ganache
  1. Heat the heavy cream in a small saucepan over medium heat until it begins to simmer (do not boil).
  2. Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 2-3 minutes to melt the chocolate.
  3. Stir until smooth and glossy. Add butter for an extra silky texture if desired. Allow the ganache to cool slightly to thicken.
Step 3: Assemble the Cake
  1. Place one cake layer on a serving plate. Spread a generous layer of ganache over the top.
  2. Add the second cake layer and coat the entire cake with ganache, smoothing it out with an offset spatula.
  3. Drizzle extra ganache decoratively over the edges of the cake.
Step 4: Garnish and Serve
  1. Slice fresh strawberries and arrange them around the base or top of the cake as garnish.
  2. Serve each slice with a few whole strawberries on the side for a fresh, tangy contrast.

Tips for Success

  • Use high-quality cocoa powder and chocolate for the best flavor.
  • Ensure your ingredients (especially eggs and milk) are at room temperature for a smooth batter.
  • Chill the cake before slicing for cleaner cuts.
