AVOCADO GRILLED CHEESE

AVOCADO GRILLED CHEESE

INGREDIENTS:

4 cups baby spinach

4 ounces crumbled goat cheese

2 avocados, halved, seeded and peeled

2 cloves garlic

Kosher salt and freshly ground black pepper, to

taste

½ cup olive oil

2 cups shredded mozzarella cheese

4 tablespoons unsalted butter, at room temperature

INSTRUCTIONS:

Combine spinach, goat cheese, avocados and garlicin the bowl of a food processor; season with saltand pepper, to taste. With the motor running, addolive oil in a slow stream until emulsified. Stir inmozzarella.

With a butter knife, spread butter on one side ofeach slice of bread. Place 4 slices, buttered sidedown, on work surface. Divide avocado mixtureevenly on all slices. Top with remaining slices, buttered side up. 

Heat a large skillet over low heat. Add sandwichesand cover; cook, turning once with a spatula, untilgolden brown and the cheese has just melted, about2-3 minutes per side.
